Carrot Molasses Mini Muffins (Gluten-free!)

This week is Holy Week here in Honduras... we are taking the week off and spent much needed family time. Our home church was here last week and it was an awesome time of fellowship and encouragement. We miss them and look forward to seeing them this fall when we come state-side. Please stop by the RO4Y blog to read up on what we are doing here.

Are these little muffins adorable? Is my little girl adorable? Sorry, couldn't help it!  :o)


I'm excited to be able to make mini-muffins using my tin mini muffin pans that my mother-in-law got for me. They make fantastic snacks for all of us, especially now that Naomi is going to Kindergarden in the mornings (primarily to learn Spanish). Like clockwork, she asks for her snack exactly at 9:30! She's funny that way  :o)


Anyway, I wanted to make carrot cake in a muffin form using coconut flour. I got this recipe from Elana, but made a few changes... such as adding in some spices, nuts, raisins and molasses to give the muffins that moist, spicy carrot cake style... oh yum!


You will see below that I've given you the option of how much honey and molasses you want to use for the mini muffins. If you don't want a strong molasses flavor than go with 3 Tbsp honey and 1 Tbsp molasses. Using half and half... I found the molasses very light with a  slightly spicy flavor. These yummy guys are sure to please the whole family and are great travel snacks!



Carrot Molasses Mini Muffins

1/4 cup coconut flour
1/4 tsp sea salt
1/4 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
3 eggs
1/4 cup coconut oil, butter or other
2 Tbsp honey (or 3 Tbsp)
2 Tbsp molasses (or 1 Tbsp)
1 Tbsp vanilla extract
1 cup carrots, grated
1/4 cup raisins, soaked in water
1/4 cup chopped walnuts

Preheat oven to 350. In a small bowl, soak the raisins in some lukewarm water and set aside. Grab another bowl and combine coconut flour, sea salt, baking soda, cinnamon and nutmeg.

In a large bowl, mix together eggs, oil, honey, molasses & vanilla. Add in dry ingredients and blend till very smooth and wet. Drain raisins and fold in carrots, raisins & chopped walnuts.

Grease and powder the mini muffin pans with oil and coconut flour. Spoon in 1 Tbsp of batter into each cup. Bake for 10 - 15 minutes. Let it cool completely before removing it from the cups to insure that it the whole muffin will come out.

Simple Lives Thursday #39

Even though this is actually my third edition of SLT since joining... It is amazing that we are currently in the 39th edition of Simple Lives Thursday. Since the original 4 (Diana, Wardeh, Annette & Alicia) started out Simple Lives Thursday blog hop nearly 10 months ago, it's been exciting to see the growth from passionate people across the blogosphere joining in and linking their posts on simple and intentional living. We have learned so much from all of you! From edible weeds to natural cockroach killer. Cured cows tongue to homeopathic remedies. Simplifying our lives to living it out in faith. We've had a tremendous response and it's been a joy learning a bit more every week on living a life of simplicity.

Since Simple Lives Thursday is growing, as a group, the five hosts have decided to set some ground rules in order to keep the integrity of the blog hop.

1. If linking real, traditional and simple recipes, please make sure all ingredients used are whole. Such as whole grains, vegetables, legumes, meats, even sugar. In order to keep the integrity of "nourishing" food, we will delete any recipes that utilize processed, boxed foods. Sourdough Journal #3: Nutty Sourdough Pancakes

So my Honduran Sourdough buddy and I made crackers a couple weeks ago. Next we decided to go for some pancakes (inspired by Erin's Pancakes Recipe)


To be honest, I was so nervous! I had my buddy in the fridge for about a week and did not know what to expect.  After I had some dinner with my family, I pulled him out... fed him 2 1/2 cups whole wheat flour and about 2 cups tepid filtered water. I set him in the warmest place I could find... above my dehydrator and said a little prayer.


Later, I wanted to check on him before going to bed. So, I took a deep breath and said another prayer. Lifted up the muslin cloth that covered the bowl...


And SQUEALED with delight... there he was, doubled in size and bubbly happily!!


I couldn't believe it. I was so excited that I did a little dance right there... LOL! Of course, I said good night to my buddy and ran to tell my hubby. He was half asleep and mumbled something, but I was too excited to care what he said :o)  I knew we were going to have some killer pancakes the next morning!




Rise and shine! I got up and head to the kitchen to put my buddy to work. At first I thought about just making blueberry pancakes, then my hubby requested some pecans... hmmm. That gave me an idea. So, went a different direction and threw in chopped pecans, walnuts and added some almond extract along with vanilla. Then a generous scoop of cinnamon went in.


Next, I started pouring the batter into my seasoned cast iron pan and dropped blueberries into the small bubbly circles. My girls and hubby love the blueberries, but I chose to have mine without them and I'm glad I did! The rich flavors of the nuts mixed really nicely with the soft tang of the sourdough. Plus, topping it off with real maple syrup just made it that much more delicious! Of course, I tried a bite with blueberries and it was delicious too! I just was not in the mood for some fruit in my pancakes that morning  :o)


After my hubby ate half of his pancakes... this is what he said, "Babe, these are the best pancakes you've ever made!"


This is a very high compliment coming from my hubby. It made me so happy that I felt like I was walking on the clouds! LOL! Seriously, they were so good. One thing I am VERY happy about is how I felt after eating these pancakes... I felt light and satisfied. In the past, I used to soak my batter for 12 to 24 hours and it would still often make my tummy feel heavy. I would also feel tired and cranky... sure sign that the phytates weren't broken down enough for my digestion (or my family's!).


So, a word to my past pancake creations... you guys have been defeated! Sorry!  :o)




Nutty Sourdough Pancakes

2 cups sourdough starter (fed in the previous 12 hours or so)
4 Tbsp butter and/or coconut oil
1/2 tsp sea salt
1 egg
2-3 Tbsp raw sugar or raw honey
1/2 tsp vanilla extract
1 tsp almond extract
1 tsp baking soda
1 tsp cinnamon (generous)
1/2 cup chopped pecans (soaked & dehydrated is best)
1/2 cup chopped walnuts (soaked & dehydrated is best)
frozen or fresh blueberries (optional)
Top with real maple syrup, yogurt and/or fresh fruit


Before mixing up your pancake batter... heat up your cast iron skillet on low heat with a little oil or butter. Best to have your pan nice and hot before pour the batter in.


While skillet is warming up, mix together in a large bowl melted butter/oil, egg, sea salt, sweetener, vanilla extract, almond extract and cinnamon. Pour in your two cups of sourdough starter. Stir well and fold in nuts. Sprinkle baking soda and quickly stir.


Spoon your batter into the hot skillet (test it with a little water, it should fizzle) and make small or large circles of pancakes. Flip when you see bubbles on top, edges starting to brown and the bottom is nicely golden. Continue till you've used up the batter.


Serve with your choices of toppings! Buen provecho!


GREAT TIP: Before adding baking soda to your batter, divide the batter into two bowls. Add 1/2 tsp to one bowl. Stir well and make your pancakes. Once you've used up that batter, stir in 1/2 tsp baking soda into the other bowl. Stir well and make your second set of pancakes. You will get more rise and fluffy pancakes if you use this method. I'm sure you've noticed the batter gets "flat" after sitting for a while.

Sourdough Journal #2: Rosemary Sourdough Crackers & Honey Cinnamon Sourdough Crackers

These crackers are SO GOOD! I really need to set up a weekly schedule with making crackers for my family. They are terrific a snack to take with us when we need to head into the city or just to simply have in hand for the girls’ daily snack routine. It is so nice to have nourishing snacks in hand at home or when traveling. It feels good knowing that I am giving my girls food that will strengthen them. Why buy processed crackers when you can make your own?


So, I’ve been learning more and more about the benefits of sourdough through the GNOWFGLINS Sourdough eCourse. One of the benefits of using sourdough for your baking needs is the increase of nutritive value. The lactic acid presented in the sourdough breaks down the phytates by 62%! Phytates are naturally presented in whole grains and acts as an enzyme inhibitor. This enzyme inhibitor is what keeps the grain from sprouting until the proper conditions are present. Which is why it is important to properly prepare whole grains before consuming to get all the nutritional benefits.


When using sourdough… the fermentation from lactic acid begins to dissolve the mineral blocking phytates and allows our bodies to fully absorb the minerals (iron, zinc, magnesium, copper and phosphorous) that are vital to our health. Another wonderful benefit from using sourdough is that the fermentation process makes the grains more digestible and breaks down the gluten. Does all this make you want to whip up a batch of these delicious crackers?!



Seriously, they are super easy to make and SO crispy when done right. I mentioned before that I’ve made soaked version of crackers, but I am now so hooked on these sourdough crackers. I don’t think I’ll be making the other kind anymore :o) One other thing I love about these crackers is that you can use the discarded starter! Instead of throwing it away (which I can't bring myself to do!) or feeding it to my chickens… I just simply store it in a jar, in the fridge, till you get the amount you need.


When making these crackers I decided to split the dough in half and do two different flavors… savory and sweet. The rosemary is simply heavenly and wonderful with tang you get from the lactic acid in the dough. The honey cinnamon was good, but next time I make these I will not let the dough sit as long. The tang is a little too much that you can’t really taste the sweetness of the honey or the spicy cinnamon. Don’t get me wrong… it’s still very good! My girls (and hubby) love both flavors and have been begging for them since I made them!


With the Rosemary Sourdough Crackers… I basically followed Erin’s and Katie's recipes (which you can find in the e-course). But with the Honey Cinnamon Sourdough Crackers… I wanted to try and see if I could get something like graham crackers. After rolling out the dough, I drizzled honey and sprinkled cinnamon on top. Next time, I plan to add the cinnamon into the dough with a little honey on top. I'll try to remember to post the recipe, but it needs a little work for now.




Well, what’s next on my list to conquer? Hmmm… I think I will try making pancakes! Will keep you all posted. Come along with me as I learn the beautiful art of making sourdough!
