Delicious Lime Creamsicles (honey-sweetened & dairy-free)

Hello friends! We are back in the states for our two month furlough and it seems that summer doesn't want to lose its grip around here just yet.

During our first week in Iowa we experience temperatures up to the 100s and it was pretty humid. Ugh.

Then, we were in Arizona visiting churches and friends... yes, it was HOT there, but thankfully not humid. We enjoyed the pool every morning with the kids and cooling down with cold or frozen fruits and smoothies.

Now, we are in Southern California and the last few days have been in the lower 90s.

Goodness, summer is sure hanging on! But I've got something to share with you that will cool off the day nicely...



Creamy, rich Lime Creamsicles. Perfect for hot days and so easy to make and... and... and...

so tanglicious!

Plus, they only call for 3 ingredients!

I also love the vivid green color. Totally natural... no food coloring in my kitchen!

Maybe you might've already guessed what the main ingredient is.



Yes. Avocado.

I love avocados.

They are creamy. Rich in good fats. A great snack and there is so much you can make with avocados!

Remember, avocado is a fruit. So, technically it should be used like a fruit to make sweet stuff like Aquacate del Chocolate (diary-free chocolate pudding), Lime Mousse, smoothies and ice cream, but it is great for savory things like Avocado Gazpacho too!



I've made them several times and everyone loves them! Really, they are super easy to make and SO refreshing!

Summer is holding on for a little while longer so it is best to enjoy it with some tanglicious lime creamsicles while you can!!


Lime Creamsicles
(honey-sweetened & diary-free)

1 cup water
1/4 - 1/3 cup honey
3 ripe avocados
4 - 6 Tbsp fresh lime juice
zest of one lime
pinch of sea salt

Add in water, 1/3 cup of honey and avocados into a blender or food processor. Puree until smooth.

Add in 1/8 cup of fresh lime juice and sea salt. Puree until just combined.

Taste the mixture and add in more honey and/or lime juice until it is to your liking.

Scoop into popsicle molds or cups with sticks. Freeze until solid (about 5 hours).

Enjoy!

How to NOT Give Up Eating Well When Life Gets Crazy

Note from Marillyn: During the months of September and October you will be seeing several good blogger friends to do guest posts  for me on Just Making Noise. This is totally a blessing and a way to keep things going here while my family and I are on our furlough.

Today I am sharing a guest post from Lauren at Mindful Mama, a new friend and fellow Jesus-loving mama blogger. I am thrilled with what Lauren is sharing with us today because I totally understand and live this out many times as a missionary mama, but just didn't know how to put it into words to share with you all! Now, I don't have to because Lauren has done it! Thank you Lauren!

I don't know about you, but there is only so much I can handle as a mother and a wife...

my fuse might just be a tad bit shorter than the average mama. Or maybe I just tell myself that to feel a little better about returning to that frazzled state, one too many times.

Life has been crazy for us...well practically, since marriage. Finishing nursing school, moving to a completely different part of the country as a (very) young married couple WITH a baby on the way, 6 years of hubbies college education, part-time jobs, ministries and 3 kids later.......WE ARE tired.

And so are you, I'm sure.

Will the chaos ever come to a halt? I'm gonna be realistic for a change and say with confidence a resounding "NO!"

In fact, two months ago, after my husband FINALLY finished his counseling degree, we sold all our stuff and in our 1998 Honda Odyssey drove back up the east coast to return to our hometown in upstate NY, where we will live for the next 2 years (more or less). Right before this big move we drove a total of 44 hours to and from our missionary training center in Kansas City, Missouri. Needless to say all of the chaos in this transition has been exceptionally challenging.

And challenging it has been to KEEP healthy eating a top priority. If you are trying to feed your family a healthy, nutrient-dense diet, somewhere along the way you decided that it was priority enough to research, shop, search, spend, cook and cook and cook......to eat this way.



Should this change when life gets crazy?
Well yes......and no.

Yes- because in seasons like this "SOMETHINGS GOTTA GIVE!" The simple logistics of demands on your time automatically changes how much time you are able to spend on finding/preparing/cooking REAL FOOD.

No- because sacrificing a filling, nutrient-dense diet during times of greater stress will only create more problems, causing you to perpetuate the vulnerable place your body is handling under increasing stressors.

Below are suggestions on how you can both sacrifice and preserve when life gets crazy.

SACRIFICE: Cut the non-essentials
Recognize the things that you do because your family enjoys them, but are not necessary for health. Is it homemade granola, crackers, ice cream or cookies you make every week? These things are fun to have, but sap up your time and energy that you need to use on other things. Cut those things out for a time, promising to return to them when things even out in your life.

PRESERVE: Keep the essentials
Evaluate the things you make that are the cheapest, quickest, biggest yield and most nutrient-dense. Homemade yogurt, homemade broth and chicken, batch of tossed salad, soaked beans/lentils, soaked & dehydrated nuts, baked oatmeal…..keeping up with these more frugal things can feed a lot of people, fill them up, and will help to keep you healthy during your crazy time.

SACRIFICE: Cut the complicated dishes.
Although you may love trying new recipes, and learning new real food tips and staples, this is NOT the time to venture out. You WILL have time to advance in your skills and understanding of how to cook the most nutrient-dense, real food diet for your family, but LOOK AROUND, if you are in a crazy season there may be other things in your life that are in desperate need of your attention at this time.

PRESERVE: Keep the easy-peasy dishes.
Stick to what you know. Remember the basics and stay there. Meat, starch and veggies. Even if you are on a special diet, the basics are still the basics. We eat a grain-sugar-lactose-free diet presently and pulling back to simple meals like burgers wrapped in lettuce with veggies sides or grilled chicken salad has fed us many a night in this crazy time.

SACRIFICE: Cut the challenging nutrient-gems.
Kombucha, homemade coconut/almond milk, kefir/crème fraiche/homemade cheeses, sauerkraut, liver pate…these things have incredible nutrient-value, and yet your body will probably not suffer if you take a pause in making them for a time.

PRESERVE: Keep the easy nutrient-gems.
Throw on the butter, coconut oil, lard, eggs, raw cheeses, red meats, oily canned fish, nuts and nut butters. These quick and easy foods offer your family nutrients they simply cannot run without.



3 important tips to help you not give up...
1) Don't be tempted to run to the junk food that you are trying to leave behind or have left behind. Don't be tricked into thinking this is the perfect time for it, it will only leave you with decreased immunity and ability to handle stress.

PLUS- you will be discouraged that you've made so many gains in eating well, only to return to the old junk. Old habits die hard, again and again.

Continue to swap out Doritos and Oreos with other quick and easy snacks (that won't make you feel cruddy!) like whole fruit with nut butter, dried fruit and nuts, cheese sticks, hard boiled eggs and veggie sticks. For meals, throw a roast in the crockpot, or some ground beef on the stove instead of the tempting idea of a frozen meal or an ordered pizza.

2) Employ others to help you. Whether your family members play a big or small role in food prep and cooking in your house, NOW is the time to employ them further! Whatever tasks they are able to do daily will help free you up more! Don't underestimate how helpful this can be. Strongly encourage your family that if they want to eat, you NEED their help…and you will be more than grateful for the extra help you have in this time.

3) If you find that it always seems you and your family are in this chaotic time that I am referring to, then maybe you need to take a step back and evaluate what your priorities are. Are you pursing things that don't have much value? Is entertainment sucking the life out of you? Are you wrapped up in a hobby that benefits no one in your life and only yourself? Is your job more of a stressor and less of a true necessity? Could you cut back in any of these areas to release yourself to pursue feeding your family a real food diet??

If you are one who says 'my life is ALWAYS crazy', it's my guess that you realize the value of real food for those you love, but haven't taken the steps needed to make it a reality--- and reap the benefits of blessing your bodies with truly healthy foods.



Be encouraged!
My husband and I are planning on making a move to Thailand in the next two years to be missionaries there who focus on helping address the needs of other struggling missionaries (member care).

My dream is to use the natural health training I have had to help keep missionaries thriving in their world, so their impact can be as life-changing as possible. When thinking about a missionary's lifestyle, I recognize that these times INEVITABLY come, or quite possibly make up a large part of a missionaries life. I'm sure Marillyn could completely attest to this hard reality. (Marillyn - yes, it is very much a part of our missionary life, but I am happy to say that I already do most of what Lauren has suggested above and have now learned some new ideas! Thanks Lauren!)

While I am apprehensive that I will be able to feed my family well in this midst of such a crazy missionary lifestyle, I am encouraged by this season we are in now, and how we have honestly been able to continue to make EATING REAL food a priority. Apart from extenuating circumstances, I believe it IS important and possible to feed your family well, no matter how busy you are.

Be encouraged, you can choose which things your family can PRESERVEin eating foods that nourish, and which things you can SACRIFICEduring your crazy season to safeguard your sanity and well being. These are the 2 keys that will help you accomplish all that you need to in this challenging time- without forfeiting your health.


Lauren is a RN by profession and a researching mom (5, 4, 1 year old) by passion.  Over the last 4 years she has brought her family from eating mostly the SAD, along with its many unhealthy consequences, to a vibrantly healthy family who is healing using REAL FOOD.  Apart from the great insight she’s gained into the failure of modern medicine through her nursing experience, Lauren has the privilege of walking with couples through labor as a birth doula.  She will start a Nutritional Therapy program in September 2013 to get a more comprehensive view of natural health, in order to provide those in her life with the most solid health counsel possible.

Wanting to be the primary discipler of her children, her husband and her have decided to home school their children, which she has bravely ventured into this year. Her husband and her are planning on moving their family to Thailand in 1.5 years to do missions work.  Additionally, they will be counseling people from a holistic model, addressing the emotional/spiritual/health aspects of overall well being.

Cafe con Leche Ice Cream Pie (gluten-free crust & dairy-free option)

Cafe con Leche... rich and creamy with just enough sweetness to gentle the bitterness of the coffee, but not too overwhelming sweet that you can't taste the richness of the coffee. Everything about this ice cream pie reminds me of my days as a barista at Zanzibar's Coffee Adventure on Ingersoll in Des Moines, IA.

I sure have fond memories of those days. 


Creamy and cafe-licious... this pie was truly a winner. Especially topped with some chopped coffee beans and chocolate magic shell. 

I used my cold-brewed coffee to make this, but you can just brew up some strong coffee and use that.

But I have to say that make cold-brewed coffee, also called toddy, makes a huge difference in flavor, seriously. Hot coffee tends to be bitter and harsh while toddy is sweeter and smooth. Its amazing and delicious!

I learned to make cold-brewed coffee while working as a barista and some of my favorite drinks called for toddy... especially the Polar Bear Smoothie. If you are ever in the Des Moines area, make sure you stop by Zanzibar's and order a Polar Bear Smoothie.

It is truly amazing... so good that I made an ice cream version of it in my Just Making Ice Cream ebook. 

Hmmm.......... okay, enough daydreaming. Back to this ice cream pie.


There are two ways to make this ice cream... fast and easy or slow and easy.

The fast and easy way is to simply whip up the ingredients and pour into your ice cream maker, but the end results will be more icy than creamy because of the water added in from the coffee. It tasted great, but if you are looking for more of a creamy texture... then the slow and easy way is what you want.

The ten minutes or so spend on cooking the custard was truly worth the time and effort. I rarely make custard-based ice creams as I am more of a "whip it up and throw it in" kinda gal, but I made an exception with this ice cream.

It really doesn't matter if you use 100% cream, its the yolks that will help make this ice cream creamy.



For the crust, you also have two options.

The first option is to make a meringue crust. It is completely grain-free, but the texture is not crunchy... more like chewy. I love the crust because you can throw in most anything like coconut flakes, chopped nuts or chocolate chips for flavor.

But if you are wanting more of a crunchy crust. This gluten-free graham crust is the second option.


You can get the gluten-free graham pie crust over at the Grain Mill Wagon where I posted it today. I've made other ice cream pies using this crust and it has been good so far!

Now, let's head into the kitchen and make one a Cafe con Leche Ice Cream Pie... or you can just enjoy the ice cream and skip the crust!

Cafe con Leche Ice Cream Pie

2 cups whole milk (or 1 cup whole milk & 1 cup cream) or coconut milk
1 cup toddy or strong coffee
1/2 cup rapadura, sucanat or coconut sugar
pinch of sea salt
3 - 5 egg yolks
1 tsp vanilla extract

Fast option: Simply whip everything except the yolks (or add the yolks for nutritional benefits). Pour into your ice cream machine and follow the maker's directions.

Slow option: Pour 1 cup milk, coffee, sugar and sea salt into a sauce pan over medium low heat. Stir to dissolve the sugar. Lightly whisk the egg yolks and slowly pour them into the coffee mixture, whisking constantly.

Keep stirring constantly while warming the mixture over medium low heat. Continue to stir until the mixture thickens slightly and coats the back of the spoon, this should take about 8-10 minutes. Don't let the mixture come to a boil!

Combine the rest of the milk and vanilla in a medium size glass bowl and pour the warm mixture into the cream. Stir well and put the mixture in the fridge.

Let it chill for at least 6 hours or overnight before freezing according to your ice cream maker's directions. Once done, you (again) have two options...

Serve right away as it is or scoop it in to your choice of pie crust (graham or meringue) and freeze it for a few hours to firm up. When ready, serve it with some chocolate magic shell and chopped coffee beans!

Coconut Blackberry Lime Ice Cream

I really love coconut lime ice cream... the combination is a great balance of nutty, sweet and tangy. I've always made this sorbet version of coconut lime, but decided to change it up a little bit now that I don't make coconut kefir much anymore.

I also have a ton of blackberries sitting in my freezer, grown from my own bushes. I knew throwing in some would create some beautiful colors and take the tanginess up a notch.


To be honest, I am more of a throw-it-together and pour into the ice cream machine kinda gal. Don't get me wrong, I love making the custards... but there are days where I just rather be spontaneous!

Naturally, I am a very spontaneous person... ask my hubby. It used to drive him crazy, but now he loves it because it is in my moments of spontaneous-ness that I make the best meals and desserts.

Especially ice cream  :)


And because of my spontaneous personality... having the Smart Scoop has been very handy with no need to pre-freeze the container. All I gotta do it push that 'power' button, hit the pre-cool  while mixing together the ingredients and I am good to go!

I am sure you are wondering if I actually used that coconut (in the picture above) to make ice cream. For this one, no... but I have in the past and it is SO worth the extra work!!

In fact, I think I will do that today!! Pound out a couple coconuts and make some pina colada... how does that sound?!


Coconut Blackberry Lime Ice Cream

2 cups coconut milk
1 cup regular milk (or coconut milk)
2-4 Tbsp lime juice (depends on how tangy you want it)
1/2-3/4 cup honey
zest of 1 lime
pinch of sea salt
1 cup chopped blackberries (fresh or frozen)

Mix together everything except the blackberries. Whip it until the honey dissolves completely. Pour into ice cream machine and follow the instructions that come with the machine.

When ice cream is done, you can either throw in the blackberries and give it a few whirls in the machine OR scoop out the ice cream into a container and fold in the blackberries.

Serve right away or let it firm up in the freezer. If you have a Smart Scoop, you know you won't have to firm it up if you set it on 'ice cream' setting. It will scoop right out of the machine! Amazing!

I would have shared with you all about this ice cream maker sooner if I had the time. I had originally planned to share this about mid-July, but the month has come and gone!

We've been very busy the last several weeks with large mission teams and now wrapping up our year before heading to the states for our 2 month stay. Whew!

But I always like to say... better late than never.

So, if you've been following my blog for a while, you know that I have clearly established my obsession love for homemade ice cream (even wrote an ice cream book!) and owning an ice cream compressor has been on my wish list for a loooong time.

To be honest, I had never heard of Breville until I was put in touch with the company on the possibility of reviewing their updated version of the Smart Scoop. Even when I was doing  research on the different ice cream makers in the market for my ice cream ebook... the Breville Smart Scoop never popped up on my google radar!

But now this beautiful machine is sitting in my kitchen and I am so in love with it! This is truly the ultimate ice cream maker and after playing around with it for a few weeks, it has earned a place of honor on my kitchen counter.

Since this baby arrived, I've made several batches of ice cream. Even made 3 different flavors of ice cream in one day!

Did I say that I love this machine?!

When I first researched ice cream compressors, I really expected to be impressed if I ever got my hands on one. After testing the Smart Scoop with different kinds of ice cream, gelato and sorbet, I can honestly tell you that this machine is awesome and is easy to use!




The 4 reasons why I really LOVE this Smart Scoop:

One.
This machine is truly a smart one. You can choose from 12 settings... from super soft serve ice cream to extra firm. At the highest level, the ice cream is totally scoopable straight out of the machine!

I'm in ice cream heaven.

Instead of making ice cream and then putting it in the freezer and waiting hours to let it firm up enough to scoop, you can serve it straight from the machine! In less than an hour, the ice cream maker produces ice cream, frozen yogurt, gelato and sorbet in the consistency of your choosing.

Here's a bonus, you can churn ice cream firm enough to make ice cream sandwiches straight out of the machine!




Two.
This baby automatically senses the hardness of the mixture and keeps it ready until serving time. It will keep churning the ice cream just enough to maintain the perfect consistency for up to 3 hours after it has finished. Sweet!

You want soft gelato? You got it. Want firm ice cream? Coming right up!

Three.
There is no bowl to freeze. No ice or rock salt required. Everything you need is contained in the machine itself.

When you are ready to make ice cream, you just pour the prepared mixture into the container, set your desired hardness and press start! No planning in advance. No 24 hour chill time for the bowl.

It is now extremely, dangerously easy to make ice cream at home.

In case you haven't already figured out my final reason... because there is no need to freeze and re-freeze the bowl, you can make batch after batch after batch and so on.

Think about it, you can make enough ice cream to feed a crowd in just a few hours!
